Vegetarian Cuisine
CHOCOLATE AND SILKEN TOFU MOUSSE
A creamy dessert low in fat and sugar and high in calcium. Easy to prepare. Serves 4.
Ingredients:
• 150 gram (5 ½ ounces) bar dark chocolate (organic)
• 350 gram (12 ounces) pack silken tofu
• Grated zest one orange
• Grated chocolate or chopped nuts for garnishing
Directions:
1. Break chocolate into squares and place in small bowl with 3 teaspoons filtered water. Place bowl over pan simmering water and gradually stir until chocolate has melted.
2. Put silken tofu into blender and add melted chocolate and orange zest. Blend until chocolate mixed in.
3. Pour mixture into individual ramekins and place in refrigerator to set for 2 – 6 hours.
4. Before serving, sprinkle with grated chocolate or some chopped nuts.
5. Option: Substitute the plain dark chocolate for flavoured varieties, eg chocolate and orange or cinnamon.

SATCHIDANANDA
Existence, knowledge, and bliss absolute.
Sat means Existence or Truth. Chid is the expression, knowledge, of it. Ananda is the Bliss you get out of it. So Truth, Knowledge, Bliss is what we mean by the word Satchidananda.
In a way, the meaning could be compared to the Holy Trinity.
You are in essence the spiritual Being. You are made up of the same substance of Satchidananda of which Brahman is made. – Sri Swami Sivananda
