OLIVE SPREAD

A tasty picnic or lunch snack, or party nibble. Makes attractive sandwich stuffing (serves 4 ) or use as topping for crackers or wholewheat bread and garnish with salad cress or parsley.

Ingredients:

20 green olives stuffed with pimento

½ red bell pepper, cored, seeded and chopped

3 tablespoons walnut pieces

2 tablespoons vegetable oil of choice, eg. Olive, canola, avocado oil.

Directions:

  • Blend the ingredients together. Blending to a coarse puree or chop the ingredients very finely.
  • Leave to set for about 1 hour before serving.

COTTAGE CHEESE TOPPING

A flavourful topping for steamed vegetables and new or baked potatoes, or spread on toast for a light meal. Serves 4 -6.

Ingredients:

1 teaspoon lemon juice

1 tablespoon raw wheat germ

3 tablespoons cottage cheese

1 tablespoon sesame oil

1 cup plain yoghurt or sour cream

Directions:

  • Mix the ingredients together in a bowl.
  •  Serve immediately.

Glossary

PADMASANA:

Padma means Lotus. When the Asana is demonstrated, it presents the appearance of a Lotus, hence the name Padmasana.

Amongst the four poses prescribed for Japa and Dhyana, Padmasana comes foremost. It is the best Asana for contemplation. Padmasana is suitable for lean persons and for youths as well.

TECHNIQUE

Sit on the ground by spreading the legs forward. Then place the right foot on the left thigh and the left foot on the right thigh. Place the hands on the knee-joints. You can make a finger-lock and keep the locked hands over the left ankle. This is very convenient for some persons. Or you can place the left hand over the left knee and then place the right hand over the right knee with the palm facing upwards and the index-finger touching the middle portion of the thumb (Chinmudra).
