CARROT CASHEW SLICE – Serves – 4-6 – Carrots are renowned for strengthening the eyesight, celery for its calming effect on the nerves and cabbage for its all-round healing properties. Serve this tasty savoury dish with a simple boiled grain and green salad. Topped with a tomato sauce and this slice becomes a festive meal.

Ingredients:
250g millet
600ml water
250 g cashew nut pieces
2 tbsp oil
4 carrots, grated
½ white cabbage, finely chopped
4 sticks celery, finely sliced
1 tbsp mixed herbs
½ tsp freshly grated nutmeg
1 tbsp tamari
Pinch of pepper

Preparation:
Place the millet in a large pan with the water. Simmer 30-40 minutes, until tender.
Heat a dry frying pan and roast the cashews over a high heat for about 5 minutes, until lightly browned. Set aside.
Preheat the oven to 220C/425F.
Heat oil in a pan and add the vegetables. Sauté over a medium heat for about 15 minutes until the vegetables are soft.
Add the cocked millet, roasted cashews, mixed herbs, nutmeg, tamari, and pepper. Mix well. Spoon into an oiled 450g loaf pan.
Bake in the oven for 15 minutes.
Leave to cool, then turn out of the tin. Cut into slices and serve.
