BANANA CHOCOLATE PUDDING WITH BERRIES – A sattvic, sweet dessert

Here is protein and vegetables in a mousse! Tofu is extremely high in protein, iron, An easy and quick to make pudding dessert (ideal for a brunch or lunch dessert) that contains tofu, chocolate with bananas and fruit, and a thick creamy texture. The ingredients contribute protein and carbohydrates for stamina and magnesium to help relax muscles (or relieve muscle cramps. The fresh berries give appealing fresh contrast to the creamy richer texture of the pudding, but can also be optional. Serves 4-6.

Ingredients:

3 or 4 bananas
1 tablespoon lemon juice
½ cup vegetable oil
4 ounces semi-sweet chocolate, grated
OR 2 ounces melted dark unsweetened baking chocolate and 2 ounces semi-sweet chocolate grated plus add extra tablespoon honey.
10 ounces firm tofu, steamed
2 tablespoons honey
1 ¾ cups sliced ripe strawberries or other berries (optional)
Optional – extra sliced berries or use berries to decorate top

Preparation:

2. Blend all ingredients, except the berries, in a blender or food processor.
3. Add ingredients one at a time and blend each addition until the mixture is smooth and creamy.
4. Transfer the mixture to a serving dish and stir in the sliced berries.
5. Optionally, layer the berries on top.
6. The pudding does well to chill in the refrigerator before serving.
